Armenian cuisine has a rich collection of unique recipes which we've had in our culture for many generations. Baklava is one of our most prized sweet dishes, and if you haven't yet mastered it, give this recipe a try. Goris Baklava is an old favorite, and this recipe will get you to that place where you can proudly serve this dessert to your family, and once you've gotten the hang of it, to your guests too. The ingredients are simple and are readily available, so just make sure that you measure your quantities correctly and follow the instructions, and you should end up with a mouth-watering dessert in no time! [caption id="attachment_1642" align="alignright" width="300"]Ekran Alıntısı Goris Baklava drizzled with honey and melted butter![/caption] The ingredients are: 11 eggs 500 g of butter 350 ml of warm water 20 g of a good quality honey 30 g of wine vinegar 500 g of chopped walnuts 250 g of sugar 10 g of ground cinnamon 10 g of cardamom powder Instructions for your Goris Baklava: Firstly, separate your egg whites from the yolks (use only 6 of your eggs to start) and whisk well. Then, add butter, water, salt and vinegar. Whisk once again so that the mixture is smooth. Continue by adding the flour, through a sieve. Do this little by little. Add the flour until the point where the dough no longer sticks to your hands. The dough should be nice and soft at this stage. Let the dough stand for 40 minutes, and then divide it into three parts and brush the surfaces with butter. Fold the dough into squares and place them in the refrigerator. Repeat this step once again. Now, separate the whites from the yolks of another five eggs, and add the sugar. Whisk until the mixture has a meringue-like constituency. You can now add the cinnamon and cardamom. Roll out one portion of the dough and bake it at 180 degrees Celsius, and put it to one side. Roll out the second part of the dough and pour some of your meringue onto the surface, sprinkling it with nuts. Next, place the baked dough piece on top, and add the remaining meringue mix and nuts. Place the third portion of dough right on top. Brush the surface with whisked egg. Cut the baklava lightly into diamond shapes with the tip of a knife. Press the sides with fingers to keep the filling inside, brush the top with whisked egg. Slightly cut the baklava into diamonds with the tip of the knife, just to mark the shape of your dessert pieces. Your dessert is ready for the last steps, as you leave it to bake at 150 degrees Celsius for one hour. After this cut the baklava on the diamond-shaped markings and pour melted butter and honey over it. Oooh, this is such a delicious, rich recipe!
